You can create an alert with Change type to "Existing items are modified", so that whenever user changed the existing item you will get an notification. you can receive an alert if any field change in the item.

You can create a multiple alert like for new item change and another one for existing items

打开清单/库 - >功能区上的项目 - >提醒我

Open list/library -> Item on ribbon -> alert me
